Description

This Chia Pudding Chocolate Mousse recipe is creamy, chocolatey, and perfect for a healthy dessert or balanced breakfast. This blended chia pudding has a creamy, rich texture of chocolate mousse. It’s made with only 6 ingredients and will take about 10 minutes of actual work.


Ingredients

Units Scale
  • 2/3 cup chia seeds
  • 2.5 cups almond milk
  • 1/4 cup maple syrup
  • 1/2 cup cocoa powder
  • 2 tsp vanilla extract
  • 1 avocado
  • 1 scoop of chocolate protein powder (optional)

Toppings:

  • Peanut butter Greek yogurt
  • (Mix 2 tbsp PB with 1/2 cup Greek yogurt)
  • Berries or choice of fruit
  • Cocao nibs
  • @simplemills nut butter stuffed sandwich cookies

Instructions

  1. Add all ingredients to a high-speed blender and blend for 1-2 minutes until chia seeds have been completely blended.
  2. Next, add the avocado and blend for another 30 seconds.
  3. Pour into a sealable container and refrigerate for 2-3 hours or overnight.
  4. Serve chilled and add toppings of choice.
