Description

Mexican Atole is a traditional Mexican hot drink that’s thick, creamy, and gently sweetened with piloncillo and cinnamon.


Ingredients

  • 1/23/4 cup oat flour (to preference)
  • 2 cups water
  • 2 cups unsweetened plant milk
  • 1 cinnamon stick
  • 24 oz Piloncillo to taste
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree (optional)
  • Ground cinnamon or pumpkin spice for garnish (optional)

Instructions

Instructions

  1. Blend the oats in a blender or small food processor until it reaches a thick flour consistency.
  2. In a small pot, add water, cinnamon stick, and Piloncillo. Simmer (don’t boil!) for 10 minutes or until the Piloncillo dissolves. Take the cinnamon stick out after 10 minutes if you’d like.
  3. Whisk oat flour into the cold milk until it creates a thick consistency.
  4. Slowly pour it into the simmering pot while stirring nonstop. Continue to stir consistently on a low simmer to prevent clumps.
  5. Add in the pumpkin puree and vanilla extract and continue to stir until it dissolves and creates a creamy atole.
  6. Remove from heat and serve hot in mugs. Garnish with ground cinnamon or pumpkin spice. Enjoy!

*Best served fresh

*Adjust thickness and sweetener to your preference by adding more or less water/piloncillo.
