Description

These Strawberry Yogurt Chocolate Bites are a sweet, refreshing treat that combines creamy Greek yogurt with the natural sweetness of strawberries. They are wrapped in rich dark chocolate for a perfectly balanced treat.

Ingredients

Units Scale
  • 12 frozen or extra ripe strawberries, defrosted
  • 2 cups Greek yogurt
  • 2 tbsp maple syrup or agave
  • 1 tbsp corn starch + 1/4 water slurry
  • 1 bar of dark chocolate, into pieces
  • 1 teaspoon coconut oil

Instructions

  1. If frozen, fully defrost strawberries/fruit of choice in the microwave for 3-4 minutes.
  2. Mix 1/4 cup water with 2 teaspoons of cornstarch. In a small pot, bring to a simmer until it thickens. Set aside.
  3. To a blender, add strawberries/fruit of choice, Greek yogurt, sweetener, and corn starch slurry. Blend until smooth.
  4. In a bowl, melt dark chocolate along with coconut oil. Microwave for 30 seconds at a time, stirring in between, until it is fully melted.
  5. Line a cupcake baking sheet with cupcake liners or square pieces of parchment paper.
  6. Add about 1 tbsp of chocolate to fill the bottom layer.
  7. Place it in the freezer for 2 minutes to let the layer solidify. Then add about 1/4 cup of the strawberry Greek yogurt blend, followed by 1 tbsp of melted chocolate to top it off.
  8. Place the tray in the freezer for 5-6 hours or overnight.
  9. When ready to enjoy, take it out of the freezer and wait 10-15 minutes before biting into it 🙂
