Description
This Vegan Arroz con Leche (Mexican Rice Pudding) is sweet, creamy, comforting, and perfect for indulging. This cinnamon rice dessert is made with dairy-free milk, super easy to make, and you’ll only need 5 main ingredients.

- 1 cup long-grain rice
- 2 cups water
- 2–3 cinnamon sticks
- 3 cups soy milk
- 1 teaspoon vanilla extract (optional but recommended)
- 3/4–1 cup sugar
Instructions
- Place a pot of water to boil with cinnamon and rice, and cover.
- Once it begins boiling, turn to a simmer and cover for about 8-10 minutes until most of the water is absorbed.
- Once most of the water is absorbed, immediately add the milk, sugar, and vanilla extract. Turn the heat to high once more to bring the milk to a light boil. Stay nearby and watch during this part because soy milk can rise quickly and boil over.
- Once milk begins to boil, reduce to a low simmer and cook uncovered for 10-15 minutes or until most of the milk has been absorbed by the rice.
- Turn off heat when most of the milk has been absorbed but there is still a bit left. The rest of the milk will continue to get absorbed by the rice after the heat is turned off.
- Cover pot and let the rice rest for about 5-15 minutes. Serve warm or refrigerate for 3-4 hours to serve chilled. Sprinkle extra cinnamon on top and enjoy!
