This easy vegan gingerbread cookie recipe is one of the best! The cookies or slightly crispy around the edges, but very soft n the inside. They are perfectly sweetened and gently spiced.

- 2 tbsp Molasses
- 1/4 cup Vegan Butter
- 1 tsp Ginger, ground
- 3/4 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/8 tsp Salt

- 2 cups Confectioner’s Sugar
- 1 tsp Vanilla Extract
- 1–2 tbsp Almond Milk
