This saucy peanut ramen noodle recipe is the ultimate comfort food. It’s super savory, nutty, slightly sweet, and creamy. It is super easy to make and you’ll only need 1 pot and 6 ingredients for the sauce
Ingredients
Ingredients:⠀⠀⠀⠀⠀
- 1 pack of ramen noodles (12oz) or 2 pack of ramen squares
- 1 cup cremini mushrooms, sliced
- 1 cup red bell pepper, sliced
- 1/2 cup onions, chopped
- 1 tbsp minced garlic
- 1 tbsp crushed ginger
- 1 tbsp oil
- salt to taste
- 1 tsp chili powder (optional)⠀⠀⠀⠀⠀
Curry ingredients:
- 5 cups vegetable broth
- 3/4 cup peanut butter
- 3 tbsps red curry paste
- 3 tbsp soy sauce
- 1/4 cup brown sugar (optional)
- 1 can coconut milk (reduced fat ok)
- salt to taste
Instructions
1. Turn pot on medium heat and add 1 tbsp oil, add ginger, garlic, and onions. Cook for 1 minute.
2. Next, add bell peppers and mushrooms to the pot. Add splashes of water or veg broth to sauté for 5-7 minutes.
3. Now, add red curry paste to the vegetables and sauté for about 2 minutes. Add vegetables broth and stir continuously until the paste dissolves.
4.Next, add peanut butter, sugar and salt and then slowly add in coconut milk. Use a whisk or spatula to help the peanut butter dissolve.
5. Turn heat down to a low simmer and add in the ramen noodles.
6. Let noodles cook for 5 or so minutes depending on instructions on the box. Serve and add preferred toppings such as chili powder, crushed peanuts, cilantro and jalapeños!
