Description
Sopa de Coditos is a simple yet comforting pasta soup that is a staple in every Mexican household. It’s a super easy-to-make, 6-ingredient elbow pasta in a light and savory tomato broth.

Recipe:
- 8 oz elbow pasta (see above)
- 2 tbsp avocado oil (or any neutral oil)
- 3 Roma tomatoes
- 1/2 onion, chopped
- 2 garlic cloves
- 2 chiles de arbol (optional for spice 🔥)
- 8 cups vegetable broth (or 8 cups water with 1 Tbsp bouillon)
For protein:
- 1 cup lentils, beans or chickpeas, cooked
For extra veggies:
- 1–2 carrots, diced
Toppings:
- Cilantro
Instructions
- Add tomatoes, onion, and garlic to a blender along with 1 cup of vegetable broth (or 1 cup water with 1 Tbsp bouillon) and blend until smooth. Set aside.
- Place a pot on medium heat and add oil. Once the oil is hot, add the pasta and fry until lightly golden brown for about 3-5 minutes. Stir consistently to avoid burning!
- Add the tomato puree once the pasta is golden brown and let simmer for 1-2 minutes. Add diced carrots or choice of diced vegetables at this point.
- Pour vegetable broth into the pot and bring to a boil. Once boiling, quickly reduce to a simmer and cook for 3-4 minutes until the pasta is soft but not breaking apart.
- Taste and add salt as needed. Add cooked beans, lentils, or your protein of choice!
- Garnish with fresh cilantro and enjoy!
