Description

Sopa de Coditos is a simple yet comforting pasta soup that is a staple in every Mexican household. It’s a super easy-to-make, 6-ingredient elbow pasta in a light and savory tomato broth.


Ingredients

Recipe:

  • 8 oz elbow pasta (see above)
  • 2 tbsp avocado oil (or any neutral oil)
  • 3 Roma tomatoes
  • 1/2 onion, chopped
  • 2 garlic cloves
  • 2 chiles de arbol (optional for spice 🔥)
  • 8 cups vegetable broth (or 8 cups water with 1 Tbsp bouillon)

For protein:

  • 1 cup lentils, beans or chickpeas, cooked

For extra veggies:

  • 12 carrots, diced

Toppings:

  • Cilantro

Instructions

  1. Add tomatoes, onion, and garlic to a blender along with 1 cup of vegetable broth (or 1 cup water with 1 Tbsp bouillon) and blend until smooth. Set aside.
  2. Place a pot on medium heat and add oil. Once the oil is hot, add the pasta and fry until lightly golden brown for about 3-5 minutes. Stir consistently to avoid burning!
  3. Add the tomato puree once the pasta is golden brown and let simmer for 1-2 minutes. Add diced carrots or choice of diced vegetables at this point.
  4. Pour vegetable broth into the pot and bring to a boil. Once boiling, quickly reduce to a simmer and cook for 3-4 minutes until the pasta is soft but not breaking apart.
  5. Taste and add salt as needed. Add cooked beans, lentils, or your protein of choice!
  6. Garnish with fresh cilantro and enjoy!
