Description

Get ready to make some of the best vegan quesadillas of your life! These quesadillas are filled with my homemade, stretchy, vegan cheese, salsa verde, and your choice of plant-based meat. Put your own twist on these by adding your favorite salsa, avocado, cilantro, jalapeños, and more.

  1. Make the cheese according to the recipe, click here.
  2. Turn a griddle on medium heat and heat your tortillas quickly on both sides just to get them warm.
  3. Next, add 2 tbsp (or however much your heart desires) of vegan cheese and meat crumbles if you’re using any.
  4. Close quesadilla in half and keep on griddle until cheese gets a bit meltier. Flip after about 3-5 minutes or longer if you want it crispy.
  5. Take off the griddle, open quesadillas briefly to add salsa. Serve and top with cilantro.
