As a Mexican-American registered dietitian, I love creating wholesome, sweet treats that support a balanced lifestyle. These frozen yogurt bites are packed with protein, probiotics, and antioxidants, making them a perfect snack or dessert that will leave you feeling satisfied and energized. The best part: It’s a healthy no-bake dessert recipe!
Why You’ll Love This Recipe
- Naturally sweetened with fruit and maple syrup
- High in protein from Greek yogurt
- Freezer-friendly and great for meal prep
- Easy to customize with your favorite fruit or sweeteners
- No-bake treat perfect for warm days
Ingredients Needed
- Your choice of fruit: It doesn’t have to be strawberries! Some of my favorite fruits to use include cherries and mangoes. I like to use frozen fruit because it is picked at its peak ripeness and usually very sweet. Alternatively, you can choose very ripe fruit.
- Greek yogurt: I recommend using a high-protein yogurt like Siggi’s (they also offer a plant-based version), or you can also choose a coconut-based yogurt.
- Maple syrup or agave: Adding a sweetener also helps improve the overall texture.
- Corn starch + water: This slurry helps create a smooth ice cream-bar-like consistency.
- Dark chocolate bar OR graham crackers: I recommend using 70% cacao or higher for extra antioxidants and less sugar. Us using mango, I recommend using graham crackers as the base and crumble them on top, so yummy!
- Coconut oil: Helps melt the chocolate and keeps it from solidifying too fast.
How to Make Strawberry Yogurt Chocolate Bites
Step 1: Prepare the Strawberries/fruit and Cornstarch slurry
Fully defrost the strawberries in the microwave for 3–4 minutes until soft and juicy. Add to a blender. Mix ¼ cup water with 2 teaspoons of cornstarch. In a small pot, bring to a simmer until it thickens. Set aside.
Step 2: Blend the Yogurt Filling
In a blender, combine the strawberry puree with Greek yogurt, sweetener, and your corn starch slurry.
Step 3: Melt the Chocolate
Break the dark chocolate bar into pieces and place in a microwave-safe bowl with the coconut oil. Microwave in 30-second intervals, stirring each time, until fully melted and smooth.
Step 4: Assemble the Bites
Line a cupcake baking sheet with cupcake liners or square pieces of parchment paper. Spoon about 1 tablespoon of the melted chocolate into each liner to form the bottom layer. Place the tray in the freezer for 2 minutes to solidify.
Next, add about ¼ cup of the strawberry yogurt mixture on top of the chocolate base. Finish each bite with another 1–2 tablespoons of melted chocolate to cover the top.
Step 5: Freeze
Place the tray in the freezer for at least 5–6 hours or overnight until fully frozen.
Step 6: Enjoy!
When ready to eat, remove the bites from the freezer and let them sit at room temperature for 10–15 minutes to soften slightly. Then enjoy a delicious, creamy, chocolate-covered strawberry yogurt treat!
