Pumpkin Baked Oats

Make these pumpkin baked oats when you’re craving a dessert for breakfast or a healthier dessert option. All you have to do is toss all ingredients in a blender and then pour them into an oven-safe container like a ramekin. They are perfectly sweetened and super creamy on the inside. Make sure to save this recipe to make it this fall!

Ingredients for Pumpkin Baked Oats

  • Pumpkin puree: I typically just use canned pumpkin from trader joes. Keep in mind that every brand of pumpkin puree will be slightly different. You can also choose to make your own.
  • Oats: I highly recommend using rolled oats for the best results. I always go with Bakery on Main rolled oats because I love their quality and the fact that they are certified gluten-free.
  • Dairy-free milk: I just used almond milk but you can also use soy milk. I have never tried using oat milk but I have heard to avoid using oat milk with oats. 
  • Nut butters: I like using cashew or almond butter for a natural flavor. If you use peanut butter, the peanut flavor will overpower all other flavors.
  • Agave: I love using agave for this recipe but you can also use maple syrup or another sweetener of choice.
  • Pumpkin Spice seasoning: This is a shortcut for using multiple spices so if you don’t have it just blend cinnamon, nutmeg, ginger, and allspice together. Click here for a recipe.
  • Vegan cream cheese: I used Tofutti for this recipe but I also recommend the brands Violife or kite hill.

Use an Air Fryer 

I baked my pumpkin-baked oats in the air fryer using the roast setting at 350 F for 20 minutes. Make sure your container/dish is oven-safe. Keep in mind that air fryers are all different so cook time may vary.

Ingredients

Scale
  • 1/2 cup pumpkin puree
  • 1/2 cup rolled oats
  • 1/2 cup dairy-free milk
  • 1 tbsp almond cashew butter
  • 1 tbsp ground flax seed
  • 2 tbsp agave
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla
  • 1/2 tsp pumpkin spice
  • dash of salt
  • 1 tbsp pumpkin seeds
  • Cream cheese filling:
  • 1/4 cup vegan cream cheese
  • 2 tbsp agave syrup
  • 1 tbsp pumpkin puree

Instructions

  1. Add the oats, plant milk, pumpkin puree, almond/cashew butter, agave, baking powder, vanilla, pumpkin spice, and salt to a blender and blend until you get a thick batter.
  2. Pour the batter into a large ramekin or small oven-safe dish.
  3. Make the cream cheese filling by whisking the cream cheese with 1 tbsp agave soup, then do the same with the pumpkin puree and 1 tbsp agave.
  4. Add cream cheese filling and pumpkin puree on top of the batter that is already in the ramekin.
  5. Sprinkle pumpkin seeds on top.
  6. Bake for 25 minutes at 350 F OR air fry on roast setting at 350 for 20 minutes.
