These savory Chorizo Potato Tacos are one of my favorite childhood meals. They are flavorful, so easy to make and picky-eater friendly! Save this recipe for a lazy weekday dinner or even for a weekend brunch. Make this vegan potato chorizo filling for burritos, quesadilla-style or however you please! These tacos are sure to impress you and your entire family.

Tips and Substitutes to make the BEST Vegan Potato Tacos:

Potatoes:

I highly recommend Yukon Gold potatoes because of the amazing buttery texture but almost any potato will do! I have used red potatoes and they came out amazing as well.

If you are looking to reduce your carbohydrates due to medical conditions but still want to enjoy this flavorful dish, try cauliflower, diced carrots or tofu. You can either do half potatoes and half (cauliflower/carrot/tofu) or completely sub it out.

Avoiding Oil?

Try boiling the potatoes, mashing them and then adding all the ingredients! It’s actually delicious and I highly recommend.

Air frying is also an option if you want to keep them nice and crispy. Air-fry at 375 for 15-18 minutes flipping halfway through.

I’ve never tried baking the potatoes for this specific recipe but you can totally do it!

Seasonings:

The seasonings are quite simple in this recipe to enjoy the full flavors from the chorizo and chipotle.

I typically get my vegan chorizo from Trader Joe’s (my favorite!), but they also have it at Safeway and other large grocery stores. If you want to make it yourself I highly recommend this Vegan Chorizo recipe from Dora’s Table.

If you are sensitive to spice I recommend using less chipotle adobo sauce or substituting with a simple canned tomato sauce/roasted and chopped tomatoes with chiles.

Tortillas:

You can either choose to eat these with a soft tortilla or crisp them up.

To make them crispy, heat them up first to avoid the tortilla from breaking. Add the potato filling, fold tortilla to create taco and then brush lightly with avocado oil. Add to griddle and fry for 3 minutes on each side or until crispy.

Description

The best vegan chorizo and potato tacos you’ve ever had! These tacos are easy to make, ready in under 20 minutes, and super delicious.


Ingredients

Scale
  • 3 large golden potatoes
  • 8 corn tortillas
  • 2 tablespoons avocado oil
  • ½ cup vegan chorizo (I use Trader Joe’s)
  • ½ teaspoon of cumin
  • Salt and pepper
  • 3 tablespoons chipotle adobo sauce
  • 1 avocado

Instructions

  1. Cut the potatoes into very small cubes.
  2. Turn the pan over medium heat and add avocado oil.
  3. Once hot, add the diced potatoes, cumin, salt, and pepper and cook for about 10 minutes or until done. Avoid moving the potatoes too often. Mix every 3 minutes.
  4. When the potatoes are almost done, add the chorizo and adobo sauce. Cook for another 3 minutes or until heated through.
  5. Heat the corn tortillas and fill them with the potato and chorizo mixture. Add avocado slices and cilantro if desired and enjoy!
