Meal prep

This recipe is super meal prep-friendly. For best results, dice the avocado last to avoid oxidation (brown color). However, if you add extra lime juice it will preserve the color and freshness of the avocado.

Substitutes:

  • Feel free to play around with the ingredients to make your own kind of bean salad! Add extra vegetables such as zucchini and bell peppers.
  • Try using different types of beans or substitute one of them with lentils. 
  • Want to add extra “heartiness”? Try adding cooked quinoa to make it extra filling and delicious!
  • Since this is a burrito bowl-style or a Mexican salad, try adding a fresh salsa to it! I’ve have it with salsa verde before and boy was it delicious! There are so many ways to change the overall flavor of this recipe and make it your own.

Ingredients

  • 1 cup black beans, cooked/canned
  • 1 cup pinto or Peruvian beans, cooked/canned
  • 1 cup chickpeas, cooked/canned
  • 1 cup corn kernels, cooked/canned
  • 1 cup Nature’s Sweet Cherub tomatoes, halved
  • 1 large avocado, diced
  • 1/2 cup cilantro, minced
  • 1/2 red bell pepper, diced
  • 1 jalapeno pepper, diced (optional)
  • 1/4 tsp garlic powder (optional)
  • 23 limes, juiced
  • Salt and peppers to taste

Instructions

  1. Use homemade beans or canned. For cold bean salad recipes, I typically use canned.
  2. Open canned beans/corn, drain, and rinse well.
  3. Dice vegetables, and add all ingredients to a large mixing bowl.
  4. Season with salt, pepper, garlic powder, and lime juice to taste.
  5. Toss evenly and serve with tortilla chips, tostadas, or on a bed of lettuce as a salad.
