Easy Mexican Salsa Recipe

My mom has been making this easy salsa recipe for years and I can’t believe I’ve never made it into an official recipe. It almost feels too easy to make it into a recipe but I need to share it because it’s so darn yummy. With only 3 ingredients it is the best salsa to keep in the fridge for any of your favorite dishes! It is also very easy to customize and adjust to your spice tolerance and taste buds.

Make the BEST Mexican Salsa Recipe

  • Tomatoes: I always try to pick Roma tomatoes because those are the type my mom always uses. Try to pick the reddest tomatoes so your salsa can be a beautiful red color. If you can’t find Roma tomatoes at your store, just use any red tomatoes.
  • Chiles de arbol: These are dried Mexican chili peppers that translate to “tree chilies” in English. They are typically a bright red color and you can find them in a plastic bag in the Mexican aisle at most grocery stores. They are pretty spicy and if you haven’t tried them before I recommend using only 3-4 to begin and also de-seeding them. You can also substitute using jalapeños, serranos, or your favorite pepper.  Be very careful to not burn them when roasting the chilies on the griddle. Roast chilies for 20 seconds on each side and no more than that. They burn very easily so take these off as soon as you see them turn a bright red color.
  • Garlic: Trust your judgment and use as many garlic cloves as your heart desires. The sweet spot for me is 2-3 cloves of garlic for this recipe. Roast garlic for 7-10 minutes on the outer edge of the griddle to avoid burning. Roasting it will the most amazing flavor to the salsa!

Ingredients

  • 78 Roma tomatoes
  • 78 chiles de arbol, (deseed- optional)
  • 23 garlic cloves
  • Salt to taste

Instructions

  1. Turn a griddle on medium-high heat. Once it’s hot, add your tomatoes, garlic, and chilies.
  2. Roast chilies for 20 seconds on each side and no more than that. They burn very easily so take these off as soon as you see them turn a bright red color.
  3. Roast the tomatoes until they are charred on all sides, about 10-15 minutes total.
  4. Roast garlic for 7-10 minutes on the outer edge of the griddle to avoid burning.
  5. Once everything is roasted, add it all to a blender and blend until smooth. Pour into a sealable container and let it cool off at room temperature.
  6. Once it has cooled off, place it in the refrigerator and use it as you please!
