These paletas de fresa are the ultimate vegan strawberry popsicles to have on a warm summer day. They are easy to make with only 3 main ingredients; strawberries, coconut cream, and sugar. They are refreshing and perfectly sweetened!

Paletas de Fresa (Strawberry Popsicles)

There is nothing like a chilled and refreshing fruity popsicle on a hot summer day. However, it can be hard to find ice cream treats that are made with wholesome ingredients, taste delicious, and are vegan. You can make this popsicle in any flavor, it does not have to be strawberry but I LOVE STRAWBERRY paletas so that’s what I made.

Yummy treats shouldn’t be hard to make, so I made it as easy as possible for you to recreate this recipe. It should only take about 10-15 minutes of actual labor. It is about 6 hours of waiting for them to freeze BUT trust me, they are worth the wait.

Tips for the Best Paletas de Fresa:

Strawberries: I highly recommend trying strawberries but you can also use any other fruit your heart desires. I personally love a good mango or watermelon paleta as well. Look out for the mango-chamoy paleta recipe coming later this summer!

Coconut cream: This is the fattiest version of coconut milk you can find. So if you want your popsicles to come out a little creamy, I highly recommend using coconut cream. Your second choice will be full-fat coconut milk.

Cane sugar: I would try to avoid replacing regular sugar unless you have to for health reasons. If using a sugar substitute, I recommend using Stevia. Feel free to adjust the sweetness to taste, you can always add less or more after trying your first batch.

Coconut oil: If you want it extra creamy and less icy, add coconut oil. I prefer it icier so I leave this out most of the time.

Popsicle Molds

To make great paletas, we need great molds. I highly recommend using this popsicle mold for best results. It is silicone material which makes it very easy to pop the popsicle out when it’s ready. It is also very easy to clean!

Description

These paletas de fresa are the ultimate vegan strawberry popsicles to have on a warm summer day. They are easy to make with only 4 main ingredients; strawberries, coconut cream, sugar, and oat milk. They are refreshing and perfectly sweetened!


Ingredients

Scale
  • 1 pound fresh strawberries
  • 1/2 cup coconut cream
  • 1/2 cup cane sugar
  • 2 tbsp coconut oil (optional, see above)

Toppings:


Instructions

  1. Cut strawberries into thick slices and add to a mixing bowl.
  2. Add sugar to sliced strawberries, mix well, and let sit for 10-15 minutes to draw out the juices.
  3. Next, add all ingredients to a blender and blend until smooth.
  4. Carefully pour into the popsicle mold and freeze for 5-6 hours.
  5. To take popsicles out easier, run the silicon mold under warm water for a few minutes.
  6. Melt the dark chocolate, drizzle over the popsicle and then add granola crumbles on top. Enjoy!
