Sweet Potato Dessert
This sweet potato dessert was inspired by my love of sweet potatoes and lazy desserts. It takes about 5-10 minutes of actual labor and leaves you with an easy clean-up afterward. Aside from being extremely satisfying, it is also very nutritious!
This sweet potato is packed with antioxidants, fiber, protein, and tons of micronutrients. The main source of protein comes from the nuts/seeds, and nut butter. This dessert packs about 15 grams of protein just by adding a few tablespoons of hemp seeds. The sweet potato provides fiber and vitamins that support a healthy immune system and brain health.
Baking Sweet Potatoes
Air Fryer
- 400 F for 20-45 minutes
- I typically bake my sweet potatoes in the air fryer using the “roast” option. It’s easier than preheating the oven and overall fewer dishes.
- The cook time will differ depending on the type of air fryer you use. I have the Ninja air fryer and am able to fit in 3-4 whole potatoes depending on the size.
- The cook time will also depend on the size of the potatoes. For smaller sweet potatoes aim to bake them for 20-35 minutes while larger potatoes will take about 30-45 minutes.
Oven
- 400 F for 35-55 minutes
- I typically use the oven when baking more than 4 potatoes or when I am also baking other vegetables at the same time.

Ingredients
- 2 sweet potatoes
- 2 tablespoons of nut butter
- 1/2 cup pepitas (pumpkin seeds)
- 1/4 cup hemp seeds
- 1 teaspoon cinnamon powder
- 1/4 cup dark chocolate chips
- 1/4 teaspoon salt (optional)
Instructions
- Lightly coat sweet potatoes in olive oil or oil of choice.
- Preheat the oven to 400 F. Bake or air fry on the “roast” setting at 400 F for 30-45 minutes depending on the size of your potatoes. Flip over about halfway through.
- Let cool off for 10 minutes. Slice in half, fluff sweet potato with a fork, and add toppings as desired!
