Black Bean Salad

This recipe has been my go-to recipe over the years for days when I am super busy but want a super easy, convenient, nutritious meal that is also extremely tasty.
 
This delicious black bean salad is also known as a burrito bowl or a Mexican salad. The flavors that you get from this combination of simple ingredients is so fresh and flavorful!
 
This recipe can be ready in under 10 minutes or less. Perfect for meal prep, picnics, family get togethers or for a lazy weekday dinner.

Tips and Substitutes:

Meal prep
This recipe is super meal prep-friendly. For best results, dice avocado last to avoid oxidation (brown color). I also recommend adding lime juice moments before eating it as well for freshness.
Substitues:
Feel free to play around with the ingredients to make your own kind of bean salad! Add extra vegetables such as zucchini and bell peppers.
 
Try using pinto beans or maybe a mix of beans to give it more color. I have also tried chickpeas with this recipe and they did not disappoint.
 
Want to add extra “heartiness”? Try adding cooked quinoa to make it extra filling and delicious!
 
Since this is a burrito bowl-style or a Mexican salad, try adding a fresh salsa to it! I have have it with salsa verde before and boy was it delicious! There are so many ways to change the overall flavor of this recipe and make it your own.

Black Bean Salad

Ingredients

Scale
  • 2 cans of black beans
  • 1 can of corn kernels
  • 34 ripe avocados
  • 2 jalapeños (optional or sub bell pepper)
  • 3/4 cup coriander
  • 1 medium red onion
  • 1 cup cherry tomatoes
  • 45 lemons, juiced
  • Salt and pepper to taste

Instructions

  1. Dice the onion, cut the cherry tomatoes in half and chop the coriander. Open cans of beans and corn, drain and rinse.
  2. Cut the avocados last so they don’t brown.
  3. Add everything to a large mixing bowl along with the lemon juice, salt, and pepper.
  4. Taste and add salt / pepper / lime juice as needed. Serve with tortilla chips, tostadas or eaten with a spoon!
